Yellow soup (delta)

A delicious cuisine with it aromatic fragrant is more palatable with starch and more tastier when a dry fish peculiar to it is used.

In delta where this dish is popular among the urhobo tribes population, it takes years of practice to master this cuisine.

Yellow soup Delta popularly known as ”oghwo” is prepared in the party, wedding ceremony, traditional marriage and sporadically in burial occasions .

As a dish that exposes the financial strength of an organizer of an occasion , any one who dare point finger at this dish has to get ready for spending.

Here are the recipes of yellow soup delta:

1 Original-palm oil
2 water
3 starch
4 Dry pepper
5 White maggi
6 Calcium carbonate
7 Dry fish

Here is how to cook:

1 Set the cooking pot on fire and add some volume of water, enough that meet up the soup volume requirement. Allow boiling. add the pepper and the spices. stir evenly to allow for flavour diffusion.

2 add the palm oil–enough to turn the soup extremely yellow and allow boiling with the pot covered.

3 Add the dry fish together with salt, stir and taste to determine if the salt is balance or not, so that you can add more. The dry fish to be used is specific, if you’re going to prepare this dish, you should ask your neigbouring delta about the fish.

4 Here is the part of the dish where you need proper direction but if you’ve got an experience, it is just fine.

We now want to make the soup thicker with the starch but how we are going to do this to prevent this large pot of soup from turning into pot of starch cake or seed meal?

Dissolve some starch in water just like you want to make pap but should be a little bit light and then start pouring into the soup pot thoroughly and be stirring at the same time.

5 Add the calcium carbonate to the soup in other that the palm oil react with the soup water so that every area of the soup turn into pure yellow and never to covered the pot until it is drop down.

6 And finally, add the cubes and stir up. allow boiling for 30 minute so that your food is ready.
